L'acier inoxydable martensitique est autoris\u00e9 pour la vaisselle et l'\u00e9quipement - les tests standard de migration des \u00e9l\u00e9ments nocifs. Une solution d'acide ac\u00e9tique 4%, reproduisant l'acidit\u00e9 des aliments, bout dans un r\u00e9cipient en acier pendant 30 minutes, puis reste \u00e0 temp\u00e9rature ambiante pendant 24 heures. Les m\u00e9taux lourds tels que l'arsenic, le cadmium, le plomb, le chrome et le nickel sont mesur\u00e9s. Les niveaux doivent rester inf\u00e9rieurs aux limites : 0,05 mg\/kg pour le plomb et 0,5 mg\/kg pour le nickel. Les r\u00e8gles de la FDA exigent au moins 16% de chrome pour former une couche d'oxyde protectrice contre la rouille et la corrosion. La NSF exige une surface lisse, avec une valeur Ra de 0,8 microm\u00e8tre ou moins, pour limiter les bact\u00e9ries. Des \u00e9tudes montrent que l'acier inoxydable est inerte, mais que le chrome et le nickel peuvent s'infiltrer dans les aliments. Cela d\u00e9pend du type d'acier, de la chaleur de cuisson, du temps de cuisson et de l'acidit\u00e9 des aliments. Un repas lib\u00e8re moins de 45 microgrammes de chrome, ce qui est bien inf\u00e9rieur \u00e0 la dose journali\u00e8re de s\u00e9curit\u00e9 de 50 \u00e0 200 microgrammes pour les adultes.<\/p>\n\n\n\n<p><strong>Normes europ\u00e9ennes<\/strong><\/p>\n\n\n\n<p>L'Europe n'a pas fix\u00e9 de norme pour le chrome, mais exige des tests de lib\u00e9ration des m\u00e9taux. L'Autorit\u00e9 europ\u00e9enne de s\u00e9curit\u00e9 des aliments utilise une solution d'acide citrique de 5 g\/L \u00e0 un pH de 2,4. L'acier est expos\u00e9 \u00e0 70\u00b0C pendant 2 heures, puis repose \u00e0 40\u00b0C pendant 24 ou 238 heures. Les niveaux de fer, de chrome, de nickel et de mangan\u00e8se sont contr\u00f4l\u00e9s. Les limites sont de 0,1 mg\/kg pour le nickel et de 0,25 mg\/kg pour le chrome. Cette m\u00e9thode imite le contact alimentaire acide afin de garantir la s\u00e9curit\u00e9. Les s\u00e9ries 300 et 400 sont couramment utilis\u00e9es dans l'industrie alimentaire.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Acier inoxydable 304<\/h3>\n\n\n\n<p>L'acier inoxydable 304 est le type d'acier le plus couramment utilis\u00e9 dans les ustensiles de cuisine. Dans le syst\u00e8me de classification de la coutellerie, il est souvent \u00e9tiquet\u00e9 comme suit <a href=\"https:\/\/www.sogaworks.com\/wp-content\/uploads\/2024\/10\/18-8-vs-304-stainless-steel.jpg\">Acier inoxydable 18\/8<\/a>. Le premier chiffre correspond \u00e0 18% de chrome et le second \u00e0 8% de nickel. Dans le syst\u00e8me de classification de la coutellerie, il est appel\u00e9 acier inoxydable 18\/10, ce qui signifie qu'il contient 18% de chrome et 10% de nickel. Il est moins courant que l'acier inoxydable <a href=\"https:\/\/www.sogaworks.com\/fr\/blogs\/304-stainless-steel-properties\/\">Acier inoxydable 304<\/a> et est consid\u00e9r\u00e9 comme une option haut de gamme en raison de son excellente r\u00e9sistance \u00e0 la corrosion. Il est appel\u00e9 acier inoxydable de qualit\u00e9 chirurgicale car il est largement utilis\u00e9 dans les implants m\u00e9dicaux. Cependant, l'acier inoxydable 316 est co\u00fbteux et il est donc rare dans les ustensiles de cuisine.<\/p>\n\n\n\n<p>Le 316 est-il meilleur que le 304 ? En termes de r\u00e9sistance \u00e0 la corrosion, oui. Dans le syst\u00e8me de classification de la coutellerie, il est connu sous le nom d'acier inoxydable 18\/0, ce qui signifie qu'il contient 18% de chrome et environ 0,75% de nickel. Sans nickel, l'acier 430 est plus sujet \u00e0 la rouille et \u00e0 la corrosion que l'acier 304 ou 316, et il peut perdre son \u00e9clat avec le temps.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Acier inoxydable 440<\/h3>\n\n\n\n<p>Les aciers inoxydables 440 et 440C sont \u00e9galement utilis\u00e9s dans les applications alimentaires. Ils sont connus pour leur grande duret\u00e9, qui r\u00e9sulte d'un traitement thermique. Ces qualit\u00e9s sont couramment utilis\u00e9es dans les couteaux de cuisine en raison de leur solidit\u00e9, de leur tranchant et de leur r\u00e9sistance \u00e0 l'usure. Toutefois, ils sont plus sujets \u00e0 la rouille que les aciers 304 ou 316, et ne sont donc pas id\u00e9aux pour les couverts ou les ustensiles de service.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">L'acier inoxydable de qualit\u00e9 alimentaire est-il \u00e9quivalent \u00e0 304 ou 316 ?<\/h2>\n\n\n\n<p>Les \u00e9tiquettes telles que \"qualit\u00e9 alimentaire\", \"qualit\u00e9 a\u00e9ronautique\" ou \"qualit\u00e9 m\u00e9dicale\" font r\u00e9f\u00e9rence \u00e0 des normes industrielles sp\u00e9cifiques. Il ne suffit pas de conna\u00eetre les qualit\u00e9s d'acier pour affirmer que le mat\u00e9riau est conforme \u00e0 ces qualit\u00e9s. Par exemple, l'acier inoxydable 304 signifie que le mat\u00e9riau r\u00e9pond aux propri\u00e9t\u00e9s g\u00e9n\u00e9rales d\u00e9finies dans les normes nationales.
